It is a honey with special characteristics that need to be known in order to be appreciated, but, perhaps because of this, the product is favoured by an ever-widening segment of people. Thyme nectar is remarkably aromatic, which is why even honeys that are not entirely pure of this essence are already strongly characterised organoleptically, and this may be the reason for the variability of different batches of single-flower honey.
