Abbatzu, also known as Abbamele, is a traditional Sardinian product and one of the oldest in Sardinian cuisine. Basically, it is a decoction of honey and pollen with the addition of laurel leaves infused over a low flame.
Gastronomic matches: salted ricotta, seadas, or as an ingredient for some Sardinian sweets such as ‘su pistiddu’ (typical sweet for St. Anthony) or ‘su papassinu’.
It can also be enjoyed on ice cream, fruit salad, yoghurt and pannacotta, as well as brushing on roasts at the end of cooking.
